Restaurant Rust Wat in Blaricum is entering an exciting new culinary chapter under the leadership of renowned top chef Sidney Schutte.
We are proud to soon introduce an entirely new concept: French brasserie style, where simplicity, flavor, and hospitality take center stage. Familiar and accessible to all. We are building a place where guests feel at home—not fine dining with stars, but crafted with expertise and love for the product.

Job requirements

As Sous-Chef, you are the right hand of our Head Chef and co-responsible for the day-to-day operations in the kitchen.

You actively contribute to the menu, bring your creativity to the development and testing of new recipes, and ensure that every dish leaves the kitchen just as it should: lovingly prepared, beautifully plated, and served right on time.

You are a natural point of contact for the team and help colleagues grow through your knowledge, experience, and enthusiasm. Together with the Head Chef, you maintain quality and organization in the kitchen and proactively tackle any challenges. Whether it’s fixing minor malfunctions, managing inventory, or ensuring HACCP compliance – you stay calm and in control.

Your responsibilities include:

  • Helping to develop a seasonal and recognizable menu

  • Leading, coaching, and motivating the kitchen team

  • Ensuring the presentation and timing of each dish

  • Managing inventory: from receiving and calculating to ordering

  • Solving minor technical issues and reporting major ones

  • Ensuring safety and hygiene according to Arbo and HACCP guidelines

  • And of course: enjoying a drink with your team after a successful shift!

What we’re looking for:

  • Completed culinary training or demonstrable experience at a comparable level

  • Passion for classic French cuisine

  • You are stress-resistant, independent, and have a keen eye for detail

  • Flexibility to work evenings and weekends

  • You are social, a team player, and love a positive work atmosphere
