As Head Chef of Rust Wat, you’ll lead the kitchen team alongside Sidney Schutte to create a culinary experience unlike anything else in 't Gooi. No unnecessary frills — just pure flavor, craftsmanship, respect for the classics, and modern finesse.
You’re not just a master in the kitchen, but a natural leader who knows how to motivate, develop, and unite a team.
Together with Sidney, you’ll craft a recognizable and accessible menu in the French brasserie style. You’ll have the freedom to weave your own vision with his top-level background. You’ll build structure, guard quality, maintain calm during the rush — and ensure that every plate embodies what Rust Wat stands for: authentic, pure, and thoughtfully delicious.
Your responsibilities:
Lead the kitchen team from A to Z: operationally, creatively, and organizationally
Develop a seasonal menu that honors and surprises with French brasserie cuisine
Recruit, train, and coach staff, interns, and apprentices
Ensure quality, hygiene, safety, and a calm atmosphere in the kitchen
Oversee mise en place, inventory, cost control, and purchasing
Actively contribute to the success of Rust Wat within the region and beyond
Collaborate with Sidney Schutte on both conceptual and culinary levels
What we're looking for:
A chef with experience in similar leadership roles within the (high-end) hospitality sector
Someone who loves classic flavors but dares to innovate
A team player with a clear vision and the ability to inspire others
Strong planning skills, able to keep an overview and remain calm under pressure
A passion for quality, craftsmanship, and constant improvement
A love for honest ingredients, local suppliers, and seasonal influences
